I've been making crepes since I was a teen - one of our favorite family dishes was manicotti made with crepes instead of pasta, so I am very efficient at making them. That really helped a lot.

YEAH! I cannot do a roux to save my life and my crepes always look as though they were dropped on the floor or someone slept in them first. The recipe sounds absolutely delicious.
We have chicken stew and lentils. Tasty.
I don't know why I have roux magic, but I've never had problems with it, while I know that many people find it next to impossible. And as I said elsewhere, I've been making crepes since I was a teenager, so they are also simple for me. That cuts down on the time involved.

I really should not have read this while hungry.
What impresses me most is the 25 minute part. Time has a way of expanding when I'm in the kitchen. It's that multitasking that always amazes me on the cooking shows.
I am quite good at multitasking in the kitchen, and the kitchen is generally cleaner when I'm finished than when I started because I clean up as I cook.
A lot of the multitasking on cooking shows is possible because all the prep work has been done by sous chefs - everything is measured and set up for them prior to the start, so it cuts down on the time involved for the host.

I made a bechamel sauce for lasagna today. it's only the second time i've made one. i feel so proud of myself!
It's a wonderful thing to get down because it's really versatile. And it seems much more clever than it is!
That sounds so yummy. I want to try that one day. Sadly I know that I can't juggle like that...I'd need help with the crepes.
The nice thing about crepes is that you can make them ahead and reheat them briefly. Once you get practiced at them they are actually pretty easy.
That sounds amazing. o.o I sometimes dream of having such skills, but despair of actually ever developing them (a good cooking day for me is when I manage grilled cheese sandwiches without burning them). At least I can bake. XD
Cooking is easier than baking. It's a matter of experimentation and imagination. Learning to chop quickly and efficiently is one of the most important skills.

I never have cooked for you. It's hard to do in someone else's kitchen - I tend to be shy about throwing myself into that.
