In the battle between "sick" and "hungry," "sick" was winning out until just a short time ago. "Hungry" finally prevailed.

The problem is that in my kitchen, feeding myself when sick is never a matter of "open a can of soup and heat." No, I have to do something like make Thai red chicken curry with three kinds of peppers. So it took a lot of hunger to overcome the sick. But now I have lots of veggies and spicy sauces and all the good things that make for getting well.

Oh, man. Like I work from recipes. Here's my close estimate:

2 tbs peanut oil
Sliced onion or two
Sliced bell pepper or three
1-2 cans of water chestnuts

Stir fry to desired doneness

Add Chicken breasts, cubed, and cook through

Taste of Thai curry paste to taste, fish sauce to taste, can of low-fat coconut milk. Heat thoroughly, serve over jasmine rice.

i had thai chicken soup today too.

i had ugly sinus drainage sore throat issues from the very blustery day yesterday blowing allergens up my snoot. thai food always helps.
